The alcohol demon embodies all the chemical dependencies of his counterpart, Ethan Thomas. He's calm, calculating and somewhat manipulative. While Ethan viewed him as an enemy and a curse, the demon actually helped him throughout most of the game until Ethan fought and defeated him causing him to vanish for a time.

The Alcohol Demon shows up in game to tell Ethan things that are crazy super spoilers; but to get a sense of what he sounds like there's this video where he's only shown briefly behind a door (he's the fuzzy shape with the gun to Pennington's head) and this video which is a much longer monologue, though it has spoilers they might not make sense if you haven't played the first game.
